Lentil & Walnut "Ground Beef": It's Magic!

So I’ve been on this plant based journey for quite some time so I’ve tried out a lot of “substitutes” for meat and cheese. Most have been subpar but as the demand for vegan products has grown, companies have really stepped up their game! From Beyond Meat and the Impossible Burgers, to Daiya Cheddar Slices—we’ve got some pretty good options! Even with these increasingly tasty substitutions, I still prefer a more whole foods approach. That’s where this combination of Lentils and Walnuts comes in!

Butternut Squash Soup

It is the time of year when soups make it into our weekly dinner rotation quite often. For the most part they are pretty easy to throw together, feed us for days, and are so comforting on these cold almost-winter-days! This Butternut Squash Soup is no different!

My Go-to Green Smoothie!

I’ve finally perfected a quick, easy, and DELICIOUS recipe that I make regularly for me AND my toddlers (one of which is extremely picky!). The fact that this is a winner with my boys is HUGE because it is such an easy way to get them some really great nutrition first thing in the morning and it fills their bellies.

The holidays are {almost} here! I don’t know about you but in my family, holidays have always centered around food, travel, family, food, and more food. The common denominator being FOOD. Will there be some awkward political conversation you don’t want any part of? Go get seconds. Too many screaming children for your patience and liking? More food! Feed the screaming children with more food! FOOD. It’s all about the food, y’all.

Salted Chocolate Chip Cookies

This is going to sound a little bit crazy guys, but this recipe literally just came to me from the creative clouds. I have no other explanation for it. I have dabbled with baked goods a little bit (see: muffins) but never really thought I’d focus too much of my attention on the science and intricacies required in developing baked good recipes.

EASY Gluten Free Vegan Cornbread!

Cornbread! One of those things that I thought I would forever have to miss out on when ditching the meat and dairy. Boy was I wrong! Cornbread isn’t something I make often but sometimes you just HAVE to have it. Like with a big bowl of cozy chili, for instance. But Cornbread can be pretty polarizing, no? Are you a sweet cornbread person or a more savory cornbread person? I like a little bit of sugar but not much. My husband, on the other hand, smothers his cornbread in loads of butter and jam! To each his own, I suppose! This recipe came about after looking for a good recipe but being seriously let down. All I could find were recipes with lots of oil and sugar and I wanted to try and find something a little healthier. After I couldn’t find anything I decided to whip up my own version so here we are!

Buffalo Cauliflower Mac n' Cheese (Gluten Free and Vegan!)

When I began my journey with veggies, one of the first dishes I tried and made frequently was Buffalo Cauliflower Pizza. I love buffalo-anything and I’ve loved cauliflower since before it was cool to love cauliflower. And mac n’ cheese-I mean there’s really no convincing necessary here, right? Let’s get right down to business with this cheesy, spicy, slurpy goodness!

Tofu Scramble

So I think that every vegan has a favorite tofu scramble recipe. I have to be honest and admit that I haven't always been too keen on tofu. In the past, it seemed like such a weird square of "nothing"? Does that make sense? Probably not. To this day I am not a fan of little blocks of tofu in my meals. I'd rather it be incorporated in a different way...not so tofu-ish. You follow? Some of my favorite ways to eat tofu are to make a ricotta with it, faux bacon bits, and of course, tofu scramble. The first time I tried tofu scramble it was at my favorite local vegan joint, The Fiction Kitchen. I ordered the No Huevos Rancheros and was a scrambler for life after the first bite! I soon recreated this meal at home and it became a regular for Sunday brunch and mid-week 'brinners'! 

Gluten Free Banana Blueberry (or Chocolate Chip!) Muffins

The life of these sweet little muffins began as a craving I had for edible cookie dough. Of course, said cookie dough needed to be gluten free and the only "flour" I had on hand was oats-ready-to-be-turned-into-flour. I don't really even remember the exact recipe but I used date paste (because obviously), some non-vegan butter, chocolate chips, salt, almond milk, maybe some vanilla? And that's about it! After making this a few times I was determined to turn it into actual cookies.

Mango Salsa

Listen, I’ll be the first to admit that I AM READY FOR FALL. I unapologetically wish away the summer for cool autumn days, and I skip right over Thanksgiving in preparation for all things Christmas. This is me, take it or leave it! BUT I really wanted to squeeze in one more summer recipe before the soups, stews, and warm winter bowl dishes start showing up.
