Roasted Red Pepper Cashew Cream Sauce

I think we've learned by now that cashews are near and dear to my heart. Their versatility is incredible and I truly think I use them in cooking and/or am eating them every single day. Lately my favorite way to incorporate them into my dishes is to add them into existing recipes! I made a homemade marinara sauce a few weeks ago and just happened to have some leftover cashew cream...I mean why wouldn't I marry the two?! FIREWORKS, y'all. Cashew cream should always be added to marinara sauce. It's like adding heavy cream except it's so much better for you! A vegan alternative to heavy cream?! Let me say it again for the folks in the back: A VEGAN ALTERNATIVE TO HEAVY CREAM. And with minimal ingredients, you really have no excuse not to try it. 

Simple Summer Salsa

So here's the thing. I HATE mushrooms and I HATE fresh tomatoes. I know, I know. How am I even a vegan if I can't get a big veggie sandwich with juicy tomato slices and order a portobello burger at the steak joint? I manage quite nicely, actually. But oh the shock and awe when I tell people I don't like either of those things! And the immediate response: "How are you a vegan?!" I get it though, both tomatoes and mushrooms are absolutely staples within a vegan, plant based diet, but like I said I manage and there are SOME exceptions to this rule. One delicious exception being salsa. Because what is life without salsa? Well there's guacamole--but that's another post!

Healthy Chocolate Truffles

"OH I YUV DESE!"- from the mouth of babes! Also a reaction in direct response to these delectable little chocolate energy bites. With just a few ingredients and less than 10 minutes to prepare they will be a HIT at parties, to snack on, late night desserts, etc. etc. etc. AND I can guarantee they are toddler-approved! My boys thought these were a special treat in place of say, candy or ice cream or other sugar-laden things that turn them into the tasmanian devil! 

Spring Vegetable Risotto

Let me just say right away that this is a meal that requires you to stand at your stove for 30 minutes stirring your pan. BUT DON'T LEAVE YET! I can PROMISE you it will be so worth it. I had never tried risotto prior to adopting a plant-based diet but it quickly became a staple in our house. In fact, my sister who is not vegan, requests this meal the most! So you know it will be a crowd-pleaser for vegans and non-vegans, alike!

If you've read the blog post on my garden, then you know my family and I have been eating A LOT of green beans this summer! We've gotten pounds and pounds and pounds just in the month of June. I think they are nearing their end, however; and we've got a slight ant invasion we've got to take care of once we pull up the green bean plants (ANYONE GOT ANY TIPS?!). But we've been enjoying the fruits of our labor very much!
