Thai Veggie Pizza
Hey friends! Let me introduce you to one of my favorite meals of all time! THE THAI PIZZA. I love this recipe because it’s really easy but is also a little fancy and unexpected so it’s sure to impress your family, party guests, or office coworkers.
Using a pre-made dough simplifies this to the MAX so that is highly recommended! I usually buy my whole wheat dough from a local grocery store (Harris Teeter) or Trader Joes…there are also many different varieties of shelf stable dough.
You’re going to start with a base of this creamy peanut butter sauce that I use in my Thai Quinoa Salad. After that it’s just a matter of piling on your lightly sauteed/roasted veggies! This is also where you can get creative! I love to use roasted cauliflower lightly coated in some sesame oil and salt, and while that is roasting away I sautee some carrots, bell pepper, and cabbage. So tasty and ends up being BEAUTIFUL with all the color!
A couple tips: I usually cut the roasted cauliflower up into smaller pieces before piling it on the pizza. This is really just for “ease of eating”, if you will . That way you won’t be trying to take a bite out of your pizza and have half of your cauliflower fall off because they are still giant florets.
And while your cauliflower is roasting, whip out your food processor and the shredding attachment and run your carrots and cabbage through for perfect shreds! This will only take a couple minutes so you should also have time to dice up a bell pepper, get your sauce together, chop your cilantro for topping, and open a can of coconut milk to drizzle on just before eating!
I mean look at all that color!? I freaking love this pizza. The peanut butter sauce will dry out a bit while cooking but you’ll have plenty to drizzle on after cooking, on top, and for dipping if you’d like!
This is the perfect dish to bring to, let’s say…oh I don’t know a party while watching football maybe? OH MY GOSH the Superbowl is THIS WEEKEND. How convenient! Everyone will be so impressed with this unique take on finger food so make sure you bring enough!

Ingredients:
- Whole Wheat Pizza Dough *
- 1 Cauliflower, roughly chopped into florets
- 2 Carrots, peeled and shredded
- 2 Cups Red Cabbage, shredded
- 1 Bell Pepper, diced
- 2 Tbs Toasted Sesame Oil
- Salt and Pepper
- Cilantro for Garnish
- 2 TBS+ Coconut Milk to drizzle before serving (optional but highly recommended!)
- Sriracha or other hot sauce (optional)
For the Peanut Sauce
- One recipe Peanut Sauce
Instructions:
- Preheat the oven to 425.
- Get all of your other ingredients ready. Begin with Cauliflower. Coat florets with 1 Tbs Sesame Oil and a sprinkle of salt. Roast for 20-30 minutes, until tender, turning halfway through cooking.
- While your cauliflower is roasting, sautee your veggies in 1 Tbs Sesame oil until tender and set aside.
- Make your sauce by whisking together all ingredients.
- Top your pizza with desired amount of peanut sauce (saving some to drizzle on top). Add Cauliflower and sauteed veggies. Bake for about 15 minutes, until crust is golden brown and cooked through.
- Drizzle on more peanut sauce, coconut milk, sriracha and a sprinkle of cilantro if so desired! ENJOY!
For a Gluten-Free option, look for gluten-free dough in the shelf-stable or frozen sections. Bob’s Red Mill has a gluten-free pre-made mix.
