Hey guys! I’m coming to you in the thick of Quarantine Day….788930233? That sounds about right? Especially if you have kids, amiright?! But honestly this has been a very interesting, scary, confusing, relaxing, scary, weird, loving, time. We’re feeling lots of feelings over in my house as I’m sure you are too. It’s amazing to realize all of the little things we take for granted during times like these…I miss being able to slowly roam the grocery store, I miss sitting down in a restaurant, date nights OUT with my husband, going to museums and parks with my kids, play dates with our friends, hugging people besides my family—I think I might hug every person I see when this is all over! Well maybe not but all the people I love better get ready for some long embraces!

As much as I miss all of those things I also am SO incredibly grateful to be with my family, I’m thankful for technology that let’s us SEE our loved ones regularly, I’m thankful that this has caused us to reach out to friends more frequently, I’m thankful that I’ve found new ways to be productive at home, I’m thankful for a slower pace of life currently and that the “rush” of everything has taken a backseat for the time being…I know that I’m speaking from a place of privilege but I think it’s important, for me at least, to acknowledge that while there is a lot that has been taken away from us because of this virus, there is still a lot we can find to be grateful for. I hope you’ve been able to find joy in the little cracks and crevices of this shitty hand we’ve been dealt!

Our first weekend home after our state shut down, my dad, sister, and I decided to bake bread “together”! It was so fun to text and chat with each other while we were all making our own bread—sending pictures and updates and asking my dad a million questions! Since then we’ve all been doing a lot more baking on the weekends (when we can find flour). After bread it was cinnamon rolls the next weekend, date and walnut scones after that and then this weekend I tried my hand at an Apple Galette! Galette’s can be made sweet or savory (think APPLE’s or Potatoes!) but for mine I was lucky enough to snag some KORU Apples from my friends at Starr Ranch Growers!

Here’s what’s up with the Koru Apple-which I guarantee will be your new favorite variety:

KORU Apples have a fairytale beginning. After an apple was discarded in a rose garden, a seedling took root to create what we now enjoy so much: KORU apples.

This new apple variety has a complex flavor projile. they are mostly sweet with a slight underlying tartness and notes of honey, orange juice, spice, and vanilla.

KORU apples are slow to brown once cut, making them perfect for salads and snacking in general. They also hold their shape well when used in baked dishes. You can store a KORU apple in your fridge for up to four months!

I can attest that these apples are PERFECT for snacking and baking. Before whipping up this tasty pie-like treat, I made up some apple nachos for my kids…we sliced up an apple, drizzled on a peanut butter and maple syrup mixture, then topped them off with rainbow sprinkles and chocolate chips! They were delicious!

It’s time for a more adult dessert though ;)….The galette was easy to make, it just takes a few steps and a little bit of patience! I was on the phone with my dad making sure I got the pie crust recipe perfect. Although you could easily just use pastry dough if you have it or have access to it! Don’t be intimidated at the thought of making a pie crust-it’s really easy ESPECIALLY if you have a food processor! You can do it all in there and it takes only a few minutes of kneading on the counter before it sits for about an hour in the fridge.

Next you get to dress up those thinly sliced apples! Throw in some cinnamon, sugar, a squeeze of lemon juice and some more butter and let that mixture sit while we wait for the dough to chill.

All that’s left to do now is to assemble! My dough didn’t have perfect edges when I rolled it out but I was fine with that. If it bothers you to have uneven edges you can take a knife and trim your dough into a nicer circle. You want to layer your apples in the center of your dough, leaving about an inch or so from the outside. Then you’ll fold up the dough and tuck in all those sweet slices and throw it in the oven! Optional: brush the outside with butter and sprinkle with some more sugar. Did I say optional? I meant MUST DO.

While your galette is baking, start thinking about your toppings! Now of course you can eat as is-sometimes simple is best right?! You could also top with your favorite vanilla ice cream, whip up some coconut cream and powdered sugar, OR you could drizzle on some Salted Cashew & Date Caramel that just so happens to pair perfectly with this! KORU Apple Galette

  • prep time: 1 hour, 15 minutes
  • cook time: 30-40 minutes
  • total time: Approximately 2 hours

Servings: 4-8

Ingredients:

For the Pie Crust

  • 3-4 KORU Apples, thinly slices
  • 1 1/2 Cups All Purpose Flour (plus more for kneading/rolling out)
  • 1/4 Cup Sugar
  • 1/2 Cup Chilled Butter, cut into cubes
  • Salt
  • 4-6 Tbs Ice Water

For the Apples

  • 1 tsp Lemon Juice
  • 1/2 tsp Cinnamon
  • 1/4 Cup Brown or Cane Sugar
  • 2Tbs Melted Butter
  • 2Tbs All Purpose Flour
  • Extra sugar for sprinkling, extra butter for bushing edges, finishing salt, vanilla ice cream, coconut whip, or whatever toppings you desire!

    Instructions:

  • In a food processor, pulse together your flour, sugar, and salt.
  • Add in your cubed butter and pulse until your mixture resembles sand. Add in your water 1 tablespoon at a time until a dough is formed.
  • Turn your dough out onto a floured surface and kneed briefly until dough is smooth and no longer sticky. Wrap in plastic wrap and store in fridge for 1 hour.
  • While your dough is in the fridge, combine your apples, lemon juice, cinnamon, brown sugar and butter in a bowl and mix until apples are thoroughly coated. Keep in fridge until dough is ready.
  • Preheat oven to 375. Remove dough from fridge and place on a floured work surface. Roll the dough out into a circle that is about 10 inches or so in diameter.
  • Layer your apples (without their juices) in the center of your pie dough, leaving about an inch or so on the outside. When you're done layering your apples begin folding in the sides of your dough, overlapping when necessary.
  • Brush the pie dough with melted butter and sprinkle with sugar if desired. Bake for 30-40 minutes until crust is golden brown and apples are cooked through.
  • Enjoy warm with ice cream, whipped cream, or whatever toppings you desire!
